refactor: 将服务配置从IP地址改为localhost

- 将前端、后端和nginx配置中的IP地址改为localhost，提高开发环境一致性
- 删除不再使用的gunicorn配置文件
- 更新文档和README，移除过时信息
- 优化docker-compose网络配置和卷挂载路径
- 简化启动脚本，移除健康检查和不必要的变量
- 更新文档站点配置，添加代码复制和返回顶部功能
